I met the team from Matriark Foods at the National Restaurant Show. They are “on a mission to scale access to healthy food for the benefit of people and the environment.” Their booth said “this booth fights food waste.” Interested, I stopped to ask how. They use upcycled ingredients to make tomato sauces and vegetable broth. They sell them to food service companies and restaurants and now direct to consumer, too. They sent me some products to share and will send some to a lucky reader, too!

They sent me all three sauces to try. They are Marinara, Tomato Basil and Arrabiata. All three are vegan, made with no added sugar, non-GMO ingredients and using upcycled vegetables that would otherwise have been wasted. Each carton is made with .4 lbs of vegetables that would have been thrown away. They use all USA grown ingredients. The Marinara is “gentle” with no onions and minimal garlic so it’s easy on digestion.
We enjoyed all three sauces! We used the Tomato Basil to make a Bolognese sauce and side dish. We used the Arrabiata and Marinara to make pizza and flatbreads. The sauces are tasty right out of the box and don’t require additional seasoning. The Marinara is great for people on a low FODMAP diet and kids because it has no onions and a very small amount of garlic.
