If you’re like me and everyone else these days, you need to up your cooking game and tools. Uno Casa asked me if I wanted to check out one of their cast iron pans or kitchen gadgets. Of course, I said “yes!” We’re cooking more than ever and can use all of the help we can get!
Uno Casa makes a variety of cast iron kitchen and camping tools. Both are in super high demand during these recent “safe at home” times. They believe that “home is this magical place where you can finally relax after a long day. Home is the people you share it with. And every home has this special place where everyone gathers for at least once a day — be it breakfast or dinner. Of course, it’s the kitchen.” They make a variety of kitchen tools and gadgets for every kitchen (and campsite.)
Uno Casa makes a variety of cast iron skillets, pans and even a tortilla press. They sent me a Cast Iron Reversible Griddle. It’s a grill pan on one side and a griddle on the other. It can be used at home or oven an open fire when camping. It comes pre-seasoned and ready to use and has instructions for cooking and care and an e-recipe book.
I’m excited about the flexibility of a home griddle and grill. I’m thinking eggs and pancakes on one side and grilled meats and veggies on the other. I christened the pan with an easy weeknight Chicken Quesadilla.
Easy Chicken Quesadillas
Ingredients:
- 2 Tortillas (I used Caulipower Tortillas)
- 1/2 c. chopped cooked chicken (I used leftovers)
- 1/4 c. diced onion
- a handful of shredded cheddar cheese
- 2 TBS salsa
Directions: Heat pan with skillet side up. Saute diced onion to desired firmness and add chicken to heat up. When done, move to the side. Place tortilla on skillet to heat up. Add cheese until it begins to melt. Top with salsa. Add chicken and onion mixture (and more cheese as desired) and top with the second tortilla. Flip over to heat and brown the other tortilla. This took about 3 – 4 minutes. Transfer to plate and cut into 4 pieces.
Despite the messy photo, this was delicious and so quick. The skillet is big enough to make two large quesadilla like this at a time. The recipe would be good with a variety of fillings so it’s great for using what you have on hand.
