You know that I love a healthy snack. A trend at last year’s Expo East was popped lotus seeds. Lotus seeds (also known as Makhana, fox nuts and water lily seeds) are the seeds from lotus flowers. When puffed, they’re like popcorn but they have higher protein, natural antioxidants and minerals. They’re naturally gluten and grain free and vegan.
I met Annie and Nikki from new Chicago brand Foxxpop at an event. I tried a sample of their “Truffle Affair” popped lotus superfood. I’m a big truffle fan and loved it!
I met up with Annie and Nikki a few weeks later. They grew up in India and Thailand and made one of their childhood snacks for themselves and friends. So many people loved it, so they decided to see if there was a market for it. They’ve been working with The Hatchery in Chicago to launch their business. Annie is the chef and has created all of the seasonings herself. They come from a family of four sisters, so that’s why Fox has two XXs. Their personalities show through in the catchy names and fresh flavors.
Foxxpop comes in four flavors. They are Truffle Affair, Basic Beach, I Cajun’t Even and Shake Your Bon Bon. All of the flavors are gluten free, soy free, vegan and non-GMO. They have 5g of plant protein per serving and are packed with antioxidants.
I like all four flavors. The new “Shake Your Bon Bon” is a delicious treat. It reminds me of a fave childhood cereal that used to be called Sugar Snacks (apparently now they’re called Honey Smacks.) I love a healthy version option that brings back good memories. I also love the Truffle Affair because I’m a big truffle fan. The Basic Beach is perfect for popcorn lovers.
