I first met I Heart Keenwah at a race in 2013. They’re a local Chicago company that started out making quinoa snack clusters. Since then, they’ve added quinoa puffs, chocolate covered quinoa puffs, toasted quinoa cereal and toasted quinoa. At Expo East, I reconnected with I Heart Keenwah and they sent me the toasted quinoa cereal and toasted quinoa to try out.
I Heart Keenwah uses Bolivian Quinoa. It’s sustainable, fair trade, non-GMO and larger in size. They toast the quinoa so it cooks up fluffy with a nutty taste. I loved the snacks but I’m a huge fan of the toasted quinoa products.
Ravi challenged me to make a fall breakfast with the toasted quinoa cereal. The cereal is quick cook so I cooked up an awesome fall breakfast in less than 5 minutes! I went with the Quinoa Flakes with Oats and Lucuma Fruit as a base. I mixed it with almond milk and microwaved for 90 seconds. I added 2 TBS of canned pumpkin, a TBS of honey, cinnamon and a few blueberries. Voila! A yummy, filling fall breakfast!
I also whipped up a batch of toasted quinoa to use in my meals before I head to NYC. The toasted quinoa is quick cook and doesn’t require rinsing. I mixed a cup of quinoa with 2 c of water, brought to a boil, cooked for 15 minutes and let it sit for 10 minutes. It came out perfectly. It’s fluffy and nutty. I can’t wait to whip up some lunches and dinners. I’m planning to roast some root veggies, saute some spinach and add chicken. I like making a plain batch so that I can vary how I use it.
