Happy New Year! I have a confession to make. I’ve been holding out on you. This fall, I had the opportunity to test out a bunch of great healthy products. I decided to hold out and to do a “Healthier in ’17” series of posts and giveaways to power a healthier 2017 for my readers.
At Expo East I chatted with the folks from FlapJacked about their protein pancakes and Mighty Muffins. Mighty Muffins are individual serving muffin cups that can be made in the microwave. They’re gluten free and have 20 grams of protein per serving. They’re also high in fiber and contain probiotics. You just add water (or milk/milk alternative), microwave for less than a minute and you have a protein packed snack or breakfast.
Flapjacked was born by a family’s desire to improve their eating habits after they had an autistic son. They loved pancakes, but they couldn’t find a healthy, pancake mix that they liked and that was good for them. They developed a healthy, easy to prepare pancake mix that’s perfect for active people with busy lifestyles like theirs. I was intrigued by the Mighty Muffins. I’m not really a pancake person, but I love muffins. The extra protein and probiotics make these especially appealing to me. They sent me one of each flavor of muffin to try and a second set to giveaway (so read on).
Mighty Muffins come in six flavors. They are Maple Pumpkin, Apple Cinnamon, Double Chocolate, S’mores, Peanut Butter and Chocolate Peanut Butter. I shared some of my six and tried out Maple Pumpkin and Chocolate Peanut Butter.
The Maple Pumpkin was a hit! I’m a big fan of both maple and pumpkin flavors. I added water, mixed and microwaved for 45 seconds. The muffin was fluffy (but still had a nice density) and not too sweet. I had the muffin with my breakfast and I was nice and full until lunch. Good stuff! Michelle loved the Apple Cinnamon and S’mores flavors. She added milk to hers and enjoyed them in the afternoon to tide her over until dinner.
In the spirit of full disclosure, I had a Chocolate Peanut Butter Mighty Muffin fail. I mixed up the muffin and microwaved for the same amount of time as the Maple Pumpkin. It was only partially cooked. I microwaved it for 20 seconds more and it overflowed. Then, it was still not totally right. I tried it anyway. The chocolate had a very protein-powdery taste. It was not for me. I think I’ll still to the non-chocolate flavors!
