I love fall flavors. If you’ve been around here, you may know that I have an obsession with winter squash and pumpkin. When I say pumpkin, I mean REAL pumpkin not pumpkin flavor. No PSL for me, thanks!
I had the opportunity to try new pumpkin simmer sauces from Urban Accents, a local Chicago spice company. In addition to new simmer sauces, Urban Accents makes spices, brines and seasonings, pancake and waffle mixes and popcorn seasonings. They say that they’re “your culinary wingman.” Man, I wish I’d found them sooner. My kitchen needs a wingman – STAT!
The pumpkin simmer sauce flavors include Pumpkin Tagine, Pumpkin Mole, and Pumpkin Curry. They also have a Fig and Balsamic Glaze and a variety of pizza sauces.
I used the Pumpkin Curry as a base and made a super easy, quick Pumpkin Vegetable Curry with Chicken. I used a mixture of pre-cut veggies and others that I had on hand and steamed them all before adding them to the curry. This was a very quick meal in about 30 minutes.
Pumpkin Vegetable Curry with Chicken (makes 4 – 6 servings)
Ingredients:
- 12 oz jar of Urban Accents Pumpkin Curry Simmer Sauce
- 1 lb skinless boneless chicken tenders (raw) or other protein
- 1 medium sized zucchini
- 4 fingerling potatoes
- ½ a bag of green beans/haticots verts (or similar amount)
- 1 small bag of precut, precleaned cauliflower
- 2 TBS cooking oil
1. Heat oil on a medium/high flame.
2. Chop vegetables and steam all in a pot or microwave for about half the normal cooking time.
3. Cook chicken tenders until outside is cooked/browned (about 8 minutes, flipping)
4. Add simmer sauce and bring to a boil.
5. When the sauce is boiling, lower heat to a simmer and add all vegetables. Mix thoroughly.
6. Cover pan and simmer for 20 minutes.
7. Serve as is or over rice or couscous.
This was delicious for dinner and even better the next day as leftovers. The Pumpkin Curry Simmer Sauce is tasty and has the exotic curry flavor without being overpowering. This would be good for even a less adventurous palate. The Husband tried and he liked it, too! You could use any vegetable that you have around or change up the protein. The simmer sauce is a great fit for the reluctant and/or busy cook like me!
