Memorial Day is coming! It was hard to believe until the summer humidity hit hard this week. If you’ve been invited to any BBQs, check out some ways to have make your contribution sweet. My friends at Heavenly Organics sent me some honey and honey patties to use to create some recipes to bring natural sweetness to my Memorial Day/summer BBQs. I have been on the road, so Finds’ friend Stacy created a great honey and cheese pairing and recipe for grilling. I’m planning to make a honey vinaigrette for my salad contribution to a BBQ this weekend. I may also make a honey dijon potato salad if I have time, too. [Post script: I made it and you should, too! It was delish!]
Stacy was all in and she tried the Heavenly Organics Neem Honey. She says, “In looking for honey options, Martha (as in Stewart) offered some cheese pairings. So I figured, why not? I tried it out with a comte and triple creme. Between the two, I preferred the pairing with the comte — delicious and tasted a touch decadent!”
Neem Honey is a “dark, robust and rare honey.” It is great for oatmeal or cereal but works well to baste meats, too. Stacy said, “In first opening the honey, I quickly noticed the viscosity appeared quite different than the good ol’ honey bear honey. The Heavenly Organics Neem Honey had a much thicker consistency, so when measuring it was more of a scooping than pouring or squeezing. Even still, it was quite delicious!”
She made a honey-soy grilled salmon recipe with the neem honey. She says, “It was a super simple marinade and it was really delicious.” To make a similar, simple honey-soy marinade, mix 1 tablespoon packed brown sugar, 1 tablespoon melted butter, 1 tablespoon olive oil, 1 tablespoon honey, 1 tablespoon soy sauce and 1 clove garlic (finely chopped). Place salmon in a shallow glass dish. Pour marinade over salmon. Cover and refrigerate at least 30 minutes but no longer than 1 hour. Grill salmon and brush additional marinade on both sides as needed.
