If you read this blog, you know I LOVE peanut butter (especially from Finds’ Fave Peanut Butter & Co). I was beyond delighted when Adam from PB & Co invited me to be a part of their Yum Squad – an ambassador group. Do I want to get access to new goodies and giveaways from one of my favorite companies? Hell, yes! It is good for me and it is good for you all, too! I get to test and giveaway delicious goodies from PB & Co all year long. Yay! The second challenge of 2015 is here!
The Yum Squad challenge was to make simple and delicious popsicles. The only rule – use peanut butter and keep it simple. I asked a few of my foodie advisors and landed on a vague recipe from my brother, Larry. It is SUPER simple and pretty delicious, too.
PB & Co. Dark Chocolate Dreams Banana Popsicles
Ingredients:
- 2 Heaping TBS PB & Co Dark Chocolate Dreams Peanut Butter
- 3 ripe bananas
- 1 c. coconut milk
- 1 tsp Yacon Syrup [I tested my Aveya Beauty Yacon syrup in the recipe and other uses. This product is 100% pure, raw & organic. It is a low calorie, natural sweetener that is gluten free, vegan and contains no preservatives, additives or chemicals. A little bit goes a long way, too! Check it out on Amazon. Instructions:
1. Combine all ingredients in blender. Blend until very smooth and liquid.
2. Pour into popsicle mold (and extra into a jar).
3. Freeze overnight (at least).
4. Enjoy!
It could not have been much easier! I went to dinner at Randi’s (my NJ high school friend/current neighbor) place. I brought the popsicles for us and her daughter to have for dessert. They were a big hit!
