If you read this blog, you know I don’t cook much – but I love to eat! I am proud to say that I found a super easy tool to make “zoodles” and I made a delish, easy meal. It was so easy that, well, I could make it! Through my relationship with Tomoson, I had the opportunity to try the Vegetizer by Yanu. Recently, I was sent some Zoye Vegetable Oil to try so I used it in my zoodle dish, too.
I have a larger spiralizer, but I love the small, efficient Vegetizer. The Vegetizer is compact, super easy to use and easy to clean. It comes with a wire brush and is dishwasher safe! It has a fun retro vibe and a handy carrying case.
The Vegetizer slices vegetables into perfectly shaped noodles. The blades are sharp and it slices softer vegetables easily. It works like a pencil sharpener and it is super fast! There is an end piece to protect your hand when you get closer to the blades. There are two sizes of noodles (1/16″ and 1/8″) similar to fettuccine and angel hair pasta. I did not have luck with the potato though. I have to check out some of the recipes in the e-books to see if folks soften the potatoes first or what. I made all of this zucchini/sqaush into noodles and cleaned up in 10 minutes. Score!
I decided to make my zoodles and yellow squash-oodles with chicken and diced tomatoes. I tried out my Zoye Vegetable Oil, too. Zoye is a 100% all natural soybean oil. Soybean oil is “among the healthiest of all edible oils,” and Zoye is made with renewable energy. Zoye is also Non-GMO, low in saturated fat and one of the few non-fish sources of omega-3 fatty acids. It is a great “every day” cooking oil (if only I cooked every day ;)). Zoye has less than half the saturated fat of other cooking oils. I love that it is made with renewable energy, too! You should give Zoye a try. Ingredients I used: 2 zucchini, 2 yellow squash, one 12 oz can of diced tomatoes (drained), salt, pepper, red pepper flakes, 2 TBS Zoye Vegetable Oil and one cooked chicken breast.
I kind of winged it. I heated the oil, sauteed the zoodles with salt, pepper and red pepper for ~8 minutes. I then added the diced tomatoes and simmered it for about 10 minutes until the noodles were soft. I used a chicken breast that I cooked the day before and chopped it and heated it in the simmering sauce. And voila!
This meal was SO easy, healthy and very tasty. I can see this (or some variation on it) being my go-to meal of of the summer. On our run the next day, Jeff and I chatted about other options like a piece of salmon with zoodles and a lemon butter sauce or chicken with zoodles and a pesto sauce. The combos are pretty endless. I also have some fun cucumber salad ideas. I am looking forward to checking out the 8 recipe e-books that came with the Vegetizer and noodling all of my farmers market veggies this summer.
