All Birch Benders’ products are organic and non-GMO. They use only natural and organic ingredients that you’ll recognize. Each 16 oz resealable bag makes 20+ four inch pancakes or waffles. The bags are resealable in case you have less mouths to feed.
Birch Benders offers a “classic” recipe in several flavors and also make Paleo, Protein and Gluten Free versions. The pancake mixes now come in nine varieties: Classic, Chocolate Chip, Six Grain Cinnamon, Pumpkin Spice, Gingerbread, Double Chocolate Peppermint, Protein, Paleo and Gluten Free.
Birch Benders sent me Classic, Chocolate Chip, Six Grain Cinnamon, Protein, Paleo and Gluten Free. I shared with friends and made the Paleo and Chocolate Chip varieties myself.
Molly made the Classic and she said they were super easy and very fluffy (as the package promised.)

The Paleo pancakes are grain free, gluten free, dairy free, soy free and have a low glycemic index. They’re made with cassava, coconut and almond flours, eggs, monkfruit, salt and spice. The pancakes tasted great, but like other Paleo pancakes I’ve tried, they were a bit too dense. Olivia suggested that I try frothing some eggs and mixing them in. I will definitely make another round.
The Chocolate Chip were totally straightforward and very tasty! They cooked up quickly and easily and were very fluffy. The chocolate chips are large and plentiful – as they should be. This mix is be great to have on hand to whip up a quick, delicious breakfast for “kids” young and old.
