If you’ve been around here a while, you know that I am a member of Finds’ Fave Peanut Butter & Co’s Yum Squad ambassador group. To start of the year on a healthy note, we are promoting healthy dishes made with Mighty Nut. Mighty Nut is powdered peanut butter with 85% less calories that traditional peanut butter yet it remains high in protein and is really delicious, too.
Many people use Mighty Nut for smoothies and for baking (including me). The challenge for the Yum Squad to kick off a healthy 2016 was to develop a “clean eating” recipe with Mighty Nut that avoids highly processed ingredients and artificial colors, flavors, and preservatives. Since we did an “Oatober” challenge, we were asked to come up with non-smoothie/oats recipes.
I decided to make zucchini noodles (a/k/a “zoodles”) with a peanut sauce. I also wanted to try pan roasting some chicken with a peanut coating made with Mighty Nut. I used a peanut sauce recipe from the Mighty Nut website. I am planning to make it again with a few changes that I will note. I made the chicken with a bit of sesame oil, Mighty Nut and coconut flour.
Zoodles with Peanut Sauce and Peanutty Chicken Breast (serves 4)
Ingredients:
- 3 small zucchinis
- a few small pieces of celery root chopped
- 1 c. Butternut Squash cubed
- 1/4 cup Mighty Nut Original powdered peanut butter
- 1 tablespoon honey
- 3 tablespoons soy sauce or Tamari
- 1 teaspoon sesame oil
- 2 tablespoons rice wine vinegar
- 1 tablespoon grated ginger
- 1 tablespoon chili sauce
- 1 tablespoon olive oil
1. Wash zucchini and make noodles with a spiralizer. Chop the celery root into small pieces. Cube the butternut squash and then cut into small strips.
2. Mix together lime, honey, powdered peanut butter, soy sauce, sesame oil, rice wine vinegar, grated ginger, chili sauce, and olive oil in a medium sized bowl with a fork until creamy consistency is achieved. Set aside.
3. Add your peanut butter sauce to the veggies and mix well until evenly covered.
4. Heat some olive oil in a pan on medium heat and once pan is warm, add the vegetables and sauce and cook until noodles are tender. You can serve this as a side dish or add chicken (or another protein) to make it a one pot meal.
Peanutty Chicken
- 1 lb boneless chicken tenders
- 2 TBS of sesame oil
- Mighty Nut Original Powdered Peanut Butter
- Coconut Flour
1. Take a plate and divide into 3 sections. Pour sesame oil on 1/3, coconut flour on 1/3 and Mighty Nut on 1/3.
2. After preparing the tenders, coat each piece in sesame oil, then in coconut flour and finally in Mighty Nut and set aside.
3. When all tenders are prepared, heat a TBS of sesame oil or olive oil in a skillet over high heat. When it is hot, add the tenders, cover and cook for 3 minutes covered. Flip over and cook covered for 3 additional minutes. Check to see if chicken is done.
4. Remove from pan and cut into pieces. Add chicken to Zoodles.
This meal is delicious and is super easy to make. I loved the chicken and the zoodles. Next time I make this sauce, I will use 1/3 c of Mightly Nut and a bit less chili sauce and less rice wine vinegar to make it thicker and a bit less tart. All in all this was a quick, easy and healthy meal. The Husband loved the chicken and liked the zoodles, too. He does not eat enough veggies so this is a BIG WIN!
