It’s Oatober! Peanut Butter & Co + Bob’s Red Mill #Giveaway

If you’ve been around here a while, you know that I am a member of  Finds’ Fave Peanut Butter & Co’s Yum Squad ambassador group. This October, PB & Co. is partnering with Bob’s Red Mill to declare the month of October as Oatober! They asked us to create and post a recipe with Peanut Butter & Co. peanut butter and Bob’s Red Mill Organic Old Fashioned Rolled Oats. They will also send one lucky reader 2 jars of PB & Co. peanut butter in the flavor of the winner’s choice and a 16 oz bag of Bob’s Red Mill Organic Old Fashioned Oats, so read on.

When it came to recipes with peanut butter and oats, cookies came to mind and so did Finds’ friend, Pam. Not only is Pam a fab photographer, (Check out my new head shot that she took when I was helping her to test the lighting in Lincoln Park!) she is a terrific baker. Her chocolate chip cookies disappear almost instantly. Pam was up for the challenge. I gave her two jars of PB & Co peanut butter in my fave flavors, Cinnamon Raisin Swirl and Mighty Maple, and the rolled oats. She made a few batches and settled on Oatmeal Raisin Peanut Butter Cookies with the Cinnamon Raisin Swirl.

Oatober Oatmeal Raisin PB Cookies

“Oatober” Oatmeal Raisin Peanut Butter Cookies

Ingredients:

  • 3/4 cup Butter Flavor Crisco
  • 1 cup Peanut Butter & Co. Cinnamon Raisin Swirl Peanut Butter
  • 1 1/2 cups brown sugar
  • 1/2 cup water
  • 1 egg
  • 1 tsp vanilla extract
  • 3 cups Bob’s Red Mill Organic Old Fashioned Rolled Oats, uncooked
  • 1 1/2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1 cup raisins

Instructions:

  • Beat first three ingredients until creamy.
  • Beat in water, egg and vanilla.
  • Add combined dry ingredients; mix well. Fold in raisins.
  • Cover; chill about 2 hours.
  • Heat oven to 350°F
  • Shape into 1-inch balls; placing them on an ungreased cookie sheet.
  • Bake 9 to 11 minutes or until edges are golden brown.
  • Cool 1 minute on cookie sheet; remove and place on a wire rack.
  • Cool completely.

The cookies were a hit! Pam says, “These turned out great! They’re not too sweet so you can eat lots of them at one sitting 🙂 I’d even consider these cookies a valid breakfast paired with a glass of milk or coffee. Actually, they go great with coffee – they kind of remind me of little scones. Theses cookies have broad appeal too – they got a thumbs up from me, my husband, my four-year-old, my mom and my elderly next-door neighbor. I will definitely make these again!” Did you say breakfast cookies? Yes, please!
