Go Back to School with Finds’ Fave PB & Co (#Giveaway)

If you read this blog, you know I LOVE peanut butter (especially from Finds’ Fave Peanut Butter & Co) and that I am NOT a food blogger. That said, I was beyond delighted when Adam from PB & Co got in touch to invite me to be a part of their Yum Squad – a new ambassador group. Do I want to get access to new goodies and giveaways from one of my favorite companies? Hell, yes! It is good for me and it is good for you all, too! I get to test and giveaway delicious goodies from PB & Co all year long.Yay!

Being in the Yum Squad is “tough” work. My first assignment was Dark Chocolate Dreams and the 31 Days of Dark Chocolate Dreams Cookbook. The second was to create some “Peanut Butter Buzz” with Bee’s Knees. We were asked to develop or test some recipes with The Bee’s Knees, PB & Co’s peanut butter blended with “scrumptious” honey. And now… Back to school PB & J ideas.

Like me, many of my friends and readers love PB & Co peanut butter. For this Yum Squad assignment, I enlisted Stacy again. She took on the “kids” style back to school combos with what she called “PB & J simplicity.” Then, I made some recipes for myself in my second “back to work” week that I will share, too. Also simple combinations, but really delicious.

Stacy took Peanut Butter & Co Crunch Time and Seriously Strawberry Jam. She initially suggested grilling it – that is a must try. Then she went with an easy back to school breakfast, a “fusion” lunch (which I would argue could be breakfast, too!) and a yummy dessert. Her choices:

  • For breakfast, she said, “try this ‘ooey gooey goodness’ on a toasted thin bagel served with some fresh berries (banana would’ve been good, too!)”
  • Then she made a “fusion” lunch — “PB&J enchilada, anyone? Or maybe you prefer your PB&J wrap sushi style?”
  • Finally, she suggests, “give your dessert a boost and make it more of your meal. Top a brownie with some Crunch Time and Seriously Strawberry — “ah-mazing” flavors together!”

I went for a slightly more sophisticated palate with my Cinnamon Raisin Swirl Peanut Butter and Awesome Apricot Preserves. For breakfast, I added some peanut butter to my apple. Pretty simple. Then the next day, I got creative. I spread the PB & J on a raw Coconut Wrap from Sunfoods. YUM! I loved everything about this.

I thought that the apricot, coconut and peanut combo was awesome and it kind of had a thai flair. I wondered what it would taste like with chicken for lunch. It was delicious. I think next time, I will add some greens. This was a super easy lunch to whip up for home or on the go.
